Almond Oat Bread
2 cups Almond/Oat mix**
¼ cup ground flax
1& ½ tsp baking soda (aluminum free if you have it!)
¼ tsp sea salt
¼ cup coconut oil
1 tbsp honey
1 tbsp Apple cider Vinegar*
**Take 1 cup of almonds and 1 cup of whole rolled oats and blend in vitamix or food processor until flour like consistency. This should yield 2 cups of the mixture.
*Apple Cider Vinegar should be raw, organic, unfiltered
Preheat oven to 300 degrees
Mix dry ingredients together in a bowl. In separate bowl, whisk eggs and add in honey, coconut oil and apple cider vinegar. I put my coconut oil and honey in a small pot and melted slightly for easy mixing.
Place mixture into one regular sized loaf pan (I lined mine with parchment paper for easy removal)
Bake for 40-55minutes or until a knife comes out clean
