Halibut Tacos with Mango Pepper Avocado Salsa

Halibut (topped with fresh lemon juice, sea salt & pepper) oven baked (wrapped in tin foil) 25 mins approx.

Organic corn soft shell tortillas (purchased from Comox Valley Farmers Market!) ?

Salsa:
3 med sized peppers (orange, yellow, red)
4 roma tomatoes or 1 cup of cherry tomatoes – diced
1 mango – diced
1 small avocado –diced
¼ cup red onion – sliced thinly and placed in fresh lime juice to soak
½ cup chopped cilantro
4 mint leaves chopped
juice of ½ lemon
juice of 1.5-2 limes
2 tsp olive oil
1tbsp cumin
sea salt and pepper to taste

*Soak your onions in lime juice for minimum 20 mins. Add all ingredients together and add onions when ready. Can be prepared early and placed in fridge.
*Warm your tortillas to your liking and for easy folding (without tearing!) and keep warm in oven until ready to prepare
*Once halibut is ready, prepare your tortillas as you like. I topped mine with lots of salsa, fresh arugula leaves, pea shoots & a splash of hot sauce.

Note: use any fish you enjoy best and substitute tortillas for lettuce wraps for a lighter meal ?
