Homemade Mayo!

OK…so I’ve been meaning to try this for forever & finally did it. I will share with you how I made it but I will definitely be attempting again to perfect it! This recipe I found from Wellness Mama and changed a little bit for taste. I found it a bit runny and after placed in the fridge it became more of a spread than your typical mayo…which is actually fine by me. Still tastes good.

Here it is:

2/3 cup olive oil
2/3 cup coconut oil
4 egg yolks
1.25 Tbsp fresh squeezed lemon juiceIMG_2400
1 Tbsp Apple Cider Vinegar
1/2 tsp mustard (ground)
salt & pepper to taste

put egg yolks into blender (I used Kitchen Aid mixer on low speed), blend until smoothly mixed together. Add lemon juice, apple cider vinegar, mustard and salt & pepper. Continue mixing until blended. Slowly add oil! I began with olive oil adding VERY slowly until each addition of oil was completely blended and smooth. Once the consistency was looking nice, I added my oils together and continued adding very slowly until the end.
Place into a glass jar and keep in your fridge…7 days or so.
Again, the finished consistency was not your typical mayo and the coconut added a different flavour all together but I still found it nice to add to a salad or spread!
