It’s too easy to just sneak out to the store or coffee shop and grab a bar or ball of some sort….I do it all the time. So, I’m on a mission to make a variety of bars that suit my needs! Protein, fibre, fats & of course flavour 🙂
First up, Quinoa Chia Energy Bars.
Try these out and add or remove things to fit your taste. Nuts, raisins maybe…play around and find that perfect blend.
Here’s how mine went:
1/2 cup Dry Quinoa
1/2 cup Chia seeds
2 Tbsp Ground Flax
1 Cup Rolled oats (gluten free if needed)
1-2 Pinches of sea salt
1/2 tsp Vanilla Powder (optional)…could also use extract
1/4 cup Pumpkin seeds
1/4 cup Manuka Honey (manuka not necessary)
1/2 cup chunky Peanut Butter (or almond butter) *
*if you don’t use chunky peanut butter, feel free to add in 1/4 cup chopped nuts of your choosing
Heat oven to 350 F
Mix all dry ingredients in a bowl.
Place peanut butter (or almond) and honey in a small sauce pan and heat on low until soft and mixed together.
Pour over dry ingredients and mix thoroughly.
Pour into 8×8 pan lined with parchment paper (I used 9×13 and didn’t spread the mixture across the full pan-works fine so just use what you got!
Spread and even out the mixture in the pan and put in the oven for 15 minutes.
When done, take out and cool for 15-20mins before removing from pan.
Cut into desired pieces & store in the fridge in airtight container. Enjoy 🙂
