Chocolate Coconut Cups

If you have a sweet tooth, and I’m sure you do, then these might be your new best friend. They’re quick and simple to make and taste amazing. If you haven’t made these before, try this recipe to get the basics down, then get creative and try other ingredients you like. For example, here I use pecans, walnuts, and almonds, but if you only prefer almonds that’s ok or maybe you want to try brazil nuts, go for it! This treat is easy to mix and match and find what you like best. Sometimes I put pumpkin seeds in my mixture as well, depends what I have on hand.

Chocolate Coconut Cups

For the base: (makes 12 large cups)
1 3/4 cup rolled oats
1/2 cup almonds
1/4 cup ground pecans
1/4 cup walnuts
1/4 cup coconut flakes
1/4 cup coconut oil
splash of almond or vanilla extract (optional) (almond taste amazing!)

Place all dry ingredients into blender or food processor and blend/mix away. I prefer to keep the mixture a little thick so I don’t blend until it’s perfectly smooth or flour like, stop just before it gets to that consistency. Place into bowl.
Heat your 1/4 cup coconut oil on stove until liquid and pour over your dry mixture and add extracts. Mix with hands or fork until evenly mixed with dry ingredients.
Scoop out with spoon and evenly place into muffin tray. Press down using your fingers to form a solid base.

Chocolate Goodness at the Top:
1/3 cup + 1 tbsp Coconut oil
2.5 Tbsp Maple Syrup
3 Tbsp Organic Cacao Powder

Melt coconut oil on medium (do not boil) and add maple syrup and cacao powder. Stir well.
Carefully spoon onto cups and place in freezer.
Allow a minimum of 45 minutes to set

Keep in freezer until ready to eat.

PS. Make this recipe your own! If you like it sweeter add more maple syrup, if you prefer adding cinnamon or adding maca then try it out 🙂
