Warm Beet Salad

February 4, 2015

This warm beet salad is so simple and delicious; enjoy as an appie or main course.

  • Prep: 15 mins
  • Cook: 15 mins

3 medium sized beets, washed, peeled & boiled or baked in oven until soft enough to cut through easily

Goat Cheese

4-5 Radishes thinly sliced

Mixed Green Salad

Sunflower sprouts/Pea Shoots

Balsamic Reduction

Extra Virgin Olive oil

BBQ Chicken

Sea Salt & Pepper to taste!

1Once the beets are soft enough, slice them into about 1/4 inch slices and placed in a large frying pan on low-med heat for a few minutes each side. *

2Once I placed my greens on the plate (choose any of your fav mixed greens/sprouts etc..) I added my beets

3Topped my goat cheese over the warm beets

4Add a few radish slices, and BBQ chicken (go without if you're not feelin' the meat)

5Drizzle with olive oil and balsamic reduction

* I did this because not all my beets were good to go yet. I don't necessarily think this part would be needed if your beets came out perfectly tender and to your liking.
